I think you have the recipe for what you're after (lightened, street only daily that you can track).
Beyond a few easy to remove items the biggest bang for the buck might be a lighter, and slightly shorter set of road focused wheels and tires.
Remove
Spare tire
Mounting hardware for spare, jack
Skid plates
Side steps/running boards
Carpet
Sub or larger speakers (behind the cover/grate)
Rear seat - but you wanted to keep that and look stock-ish.
Replace
Lighter bumpers or lighter crashbars behind the bumper covers **for off road / track use only of course
Lighter battery (Li)
Lighter exhaust (not sure anyone will make one out of Ti, might have to go custom) and headers
Aluminum rear control arms
Airbox - smaller and or CF
Hood - sure you will have a CF option but believe the hood, doors, and tailgate are aluminum so the weight savings may be small, and require dry carbon
Two piece brake rotors
Lighter brake calipers (FYI for anyone following the brake thread I haven't heard back from Essex/AP)
Driveshafts - not sure if one or both are already aluminum?
Rear axle - fabricated 9-inch, or even a fabricated semi-float (both would drop weight)
A question for the group - are the fenders steel or composite/plastic?
