After going through 4 devices, I've finally found one that works. The first 3 devices were either too slow to connect, couldn't zoom in/out on Google Maps, were very laggy, degraded resolution, disconnected Bluetooth, etc. The device that works perfectly is the Ottocast Car TV Mate Max.
Another issue with these devices is the USB data ports on our trucks stay powered for 1 hour after shutdown. I found a soulution to that issue on the 5th Gen Ram Forums.

I also bought a CableCreation USB 3.0 Extension Cable Right Angle 1FT, USB Extender Cord so the USB plugs don't interfere with me putting my phone in the OEM phone holder.
The only thing I can't do on Google Maps is pinch to zoom, but you can tap on the screen to zoom or use the +/- buttons on the screen. Everything else works flawlessly without lag and the screen resolution is as good as the native Android Auto.
As you can see in the bottom pic, the Ottocast device fits in the little cubby to the left of the USB ports. I didn't secure it, so if it rattles, I'll use some self adhesive Velcro to keep it secure.

I just did this mod as well. Works perfectly and is really simple. I disconnected the negative terminal on the battery before starting this modification. Keep in mind, after reconnecting the battery it takes a few hours for everything to start working correctly. After reconnecting the battery AC...
